Kitchen

Our vocational training programs are licensed by the Nevada Commission on Postsecondary Education. Our 40+ employer partners from the Strip and Downtown Las Vegas consider a CALV certificate of completion equivalent to one year of job experience. Eligible Culinary Workers Union Local 226 and Bartenders Union Local 165 members qualify for free training as part of their union benefits package.

Kitchen Steward

Students learn how to clean, sanitize, maintain, and handle kitchen equipment, properly handle and label all chemicals, and work in dish-room, steward, and deep-cleaning operations. Students gain applied learning experience supporting the Westside Bistro, 500 Grand Cafe, Culinary Arts Catering & Events, and other approved partner locations.

Length: 97 hours (3 weeks)

In conjunction with their set schedule, students are strongly encouraged to participate in additional training opportunities

Program Requirements: Minimum age 17-years-old; valid driver’s license/state ID, Social Security card, Food Handler Safety Training card; must be able to lift 50 pounds and work with dish room chemicals; must be able to communicate effectively in English or complete Vocational English class, as recommended

Baker’s Helper

Students learn how to make a variety of cakes, pastries, breads, sauces, custards, confections, and other baked goods. Students gain applied learning experience supporting the Westside Bistro, Culinary Arts Catering & Events, and other approved partner locations.

Length: 182 hours (12 weeks)

Professional Cook

Students learn a variety of cooking methods, basic cooking and food preparation, hot and cold food production, plate and food presentation, line mechanics, knife skills, culinary terminology, and become familiar with the production and operation of restaurants. Students gain applied learning experience supporting the Westside Bistro, 500 Grand Cafe, Culinary Arts Catering & Events, and other approved partner locations.

Length: 377 hours (13 weeks)
